Season the pork with salt, pepper, and your choice of additional spices or herbs.
Place the seasoned pork in a roasting pan and add some water or broth to the bottom of the pan to keep the meat moist during cooking.
Cover the pan with aluminum foil and roast in the preheated oven for 1 hour.
While the pork is roasting, wash and peel the potatoes. Cut them into bite-sized chunks.
After the pork has cooked for 1 hour, remove the foil and add the potatoes to the roasting pan, tossing them with the juices and drippings.
Return the uncovered pan to the oven and continue roasting for an additional 30 minutes, or until the pork is cooked through and the potatoes are crispy and golden.
Once cooked, remove the pork and potatoes from the oven and let the meat rest for a few minutes before slicing.
